Lentil and Butternut Squash Bake

This is a favourite with Aleesha, and it is really easy her for to chew, I started making it around 8 months for her.

FYI If you give it to your little ones who are under one, then leave out the honey.

For the mash

2 large potatoes

spoon of garlic butter

small cup of milk

pinch of dried basil

pepper to taste

1/2 tablespoon of soft cheese

For the lentils

You can use either red or yellow lentils, these are the easiest for little ones to digest

small cup of lentils

For the sauce and bake

1/3 of a butternut squash

1 carrot

1 parsnip

1/2 tin of chopped tomatoes or passata

2 tablespoons of honey

handful of corriander

pepper to taste

dash of lemon juice

grated cheese

tablespoon of oil

1. Peel and cut up the potatoes and boil in water until they are soft.

2. Add the butter until melted

3. Add the milk slowly until you have a smooth consistency but not runny

4. add the rest of the ingredients

1. Peel and cut the squash, carrot and parsnip and boil in water until soft. Rinse the daal and boil in water until it is really soft.

2. In a separate frying pan or wok heat the oil and add the tomatoes. Cook until the oil rises to the surface and the tomatoes start to thicken. Add the honey, pepper and lemon juice and cook for another 5 minutes.

3. Once the veg and daal is cooked add to the sauce. Give it a stir and cover the veg and daal together. If the sauce is too thick you can add some boiling water to it to make it runny.

4. In a baking dish, I usually use a pyrex dish, put the lentils and veg at the bottom. Then layer the potatoes on top and grate cheese to taste.

5. Stick it in the oven at 200 degrees and bake until the cheese melts.

There you go, a really quick and easy recipe for you to try. You can spice it up if you are making it for yourselves, we usually have it with yorkshire puddings and add a bit of chilli powder or paprika to the sauce if Aleesha isnt having any.
