Day one of my lifestyle change.

I woke up this morning around 6am, Aleesha didn’t sleep last night very well so that meant that I didn’t sleep too well either.

I immediately wanted to go and grab a coffee, but thought that isn’t the best way to start the morning. I want to slowly phase my coffee intake out as it doesn’t do my body any good. I have had problems with kidney stones in the past, and don’t want them reappear.

So I made a cup of tea, packed Aleesha off to nursery and came back home.

For breakfast I had 30grams of Bircher Muesli from Waitrose with skimmed milk.

From breakfast to lunch I tidied the house, did the dusting and vacuuming and then prepared for lunch.

I am off work for the next couple of weeks, in-between roles and am due to start my next one very soon so thought this would be the best time to implement this change.

I have written a menu for the whole week which I will try and stick to, so I can prepare all the meals in advance and we don’t end up ordering a takeout because we are tired or craving it. Don’t get me wrong we will enjoy a naughty junk food night, but I will be factoring in our healthy eating, so some changes will be made.. I haven’t mentioned that to my husband yet thought lol!!

For lunch I made a refried beans, cheese salad wrap. This is around 500 calories, obviously depending on how much cheese and other things you add to it.

I had a white flour wrap from Waitrose, 3 teaspoons of refried beans spread across this, handful of spinach, and rocket, about 30g of cheese, a tablespoon of low fat Waitrose yogurt, two teaspoons of Doritos salsa. Simply roll and eat… I had it with a bit more salad and it is now 2pm and I am still not hungry, hopefully will keep me going until dinner time!!

So it got to around 3pm and I was really craving my daily coffee so I gave in. I only had about 1/4 of a mug and threw the rest away. I had a large glass of water afterwards and felt better with myself.

For dinner I thought I would make my daughter some chicken and rice (Quorn chicken as we are vegetarians) then thought well my husband likes burritos and I like Tacos, so lets make Meican chicken with rice and make three meals out of one dish!! Yes I know how versatile!! (lol)

So Thats what I made.. three different variations of one dish and the pictures are below.

For the chicken the recipe is quite simple:

This should feed 5/6

One bag of Quorn chicken pieces or fillets shredded

one cup of boiled rice

Half a tin of refried beans

One red onion chopped

2 garlic cloves cut into pieces

Half a bottle of passata

handful of spinach

half a pepper chopped

1 carrot grated

pinch of salt and pepper

pinch of cinnamon powder

dash of honey

half a juiced lemon

half a juiced lime

sprinkle of smoked paprika

grated cheese

wraps/tacos

optional if you are having tacos.. selection of salad

Boil the rice and keep to one side

In a pan heat some oil and fry the onion, garlic, carrots, peppers and spinach. When these have been fried for a few minutes add the beans.

Once soft, add the passata and then salt,pepper,cinnamon,honey, lemon, lime, paprika. Leave to cook until the sauce thickens. Add the chicken pieces and cook until soft. Mix the cooled rice and enjoy!

Serve with a selection of dips/chips or just on its own!!!
