Sizzling Saturday Recipes - Cheesy tomato and lentil risotto

Aleesha Loves this recipe, and so do I, it is so simple yet so tasty.
Ingredients:
Basmati Rice 1/2 cup
Yellow or Red Lentils 1/2 cup
Knob of garlic butter
Cream Cheese as much as you want
Tomato passata 1/3 can
1/2 small red onion
fresh chopped coriander
pepper
fresh cut chives
Method
1. Boil the rice and lentils together in water after washing them. I use basmati rice because I boil the rice and lentils together, you can use risotto rice if you want, but then you would be better off cooking the rice in the sauce not boiling them.
2. In a frying pan fry the butter and onions until they are soft. Add the passata, chives and coriander and cook on the medium heat for 10 mins, stirring at regular intervals. Season with pepper.
3. Once the lentils and rice are cooked add to the sauce, cook for a bit longer, if the sauce is too dry, you can add some boiling water to it.
4. Take it off the heat and add the cream cheese, I usually add a tablespoon to make it quite creamy.
You can add vegetables to this recipe, and other meats, adapt it to your own needs :o)
